Elegance and richness – oh yes. This quality is the direct result that only a little time in barrel can bring. Grown on our Turnbull home vineyard, these grapes are first picked over three passes. Next, the whole cluster fruit is lightly pressed to preserve freshness and fruit aromatics. The resulting Sauvignon Blanc is then fermented first in terracotta amphora, and finally, aged in seasoned French Oak and Acacia barrels, and a small stainless steel tank. The wine is elevated on the lees for four months, with weekly battonage. The final product sees delicate aromas of white stone fruit blossoms, lychee, and a hint of wet flint. A textural masterpiece. Displays a soft entry, with crisp acidity and a thrilling structural core.
