Patrice Moreux cultivates 1 hectare of Chasselas vines on hillside vineyards in Les Loges. The ideal clay and limestone soils give the Domain Moreux’s Pouilly-sur-Loire a wonderful balance of soft, vivid citrus fruit and minerality. Harvest took place on September 25th, 2014, the same time as for the domaine’s Pouilly-Fumé. The fruit was carefully selected and then gently pressed in a pneumatic press for no more than 2.5 hours. The juice was very lightly cleared of solids – Patrice Moreux deliberately does not do a severe débourbage so as to enhance the wine’s complexity. The alcoholic fermentation began with the native yeasts and lasted for 3 weeks in temperature-controlled stainless steel tanks. There was no malolactic fermentation. The Pouilly-sur-Loire matured on its lees in the tanksfor over 5 months. The young wine was then racked off its lees and fined with bentonite clay. A light filtration was done 28 days (one lunar cycle) after the fining and the 2014 Moreux Pouilly-sur-Loire was bottled on April 20th, 2015.
